
B and I went and saw Harry Potter last night - FINALLY. My movie watching had been put on delay for two long so I was ready. I enjoyed the movie. The books, of course, are better but it was still good. If you are a Harry Potter nerd like me and you read the books AND see the movies, this movie didn't necessarily follow the book. There were some extra scenes that were not in the book and then the Harry/Ginny plot was a lot different as well. But it was still very good and it was the perfect set up for the last book!
So, my Combat class at Gold's Gym is tonight - EIK! I am told there will be straight kicking and punching for an hour straight. Should be interesting. Sounds kind of like Taebo and I hated that phase so I hope I don't run out of this class screaming like a little girl. Wish me luck! I will report back on my soreness tomorrow.
I was sent two recipes today for some yummy and healthy side dishes. Again, I never make these recipes because I would be cooking them for me alone but if any of you guys ever try them let me know! If it turns out they are all awful I will stop posting them :)
Roasted Broccoli With Lemon
4 cups broccoli florets
1 tablespoon extra-virgin olive oil
1/4 teaspoon salt, or to taste
1 dash freshly ground black pepper
1 lemon, cut into wedges
Preparation
Preheat oven to 450°F.
Toss broccoli with oil, salt, and pepper.
Place on a large baking sheet (not air-insulated) and roast until the broccoli is tender and blackened on the bottom, 10 to 12 minutes.
Serve immediately, with lemon wedges.
Makes 4 servings.
Orange-Infused Roasted Green Beans and Red Peppers
Ingredients
1 pound green beans, trimmed
1 red bell pepper, thinly sliced
1 tablespoon extra-virgin olive oil
Zest of 1 orange
1/2 teaspoon salt
1/4–1/2 teaspoon crushed red pepper
Preparation
Preheat oven to 450°F.
Toss green beans, bell pepper, and oil in a large bowl.
Add orange zest, salt, and crushed red pepper to taste; toss to combine.
Spread on a large baking sheet.
Roast the vegetables, turning once halfway through cooking, until tender and slightly wilted, about 15 minutes.
Makes 4 servings.
I also have wanted to give a quick shout-out to my friend Diane! I meant to write this yesterday but completely forgot. Diane has gotten a job as a teacher! YEAH! Not only did she get a job, she interviewed and was offered the job on her birthday - What a fantastic gift! Diane will be teaching Junior High Science and also coaching Jr. High Track, Volleyball and High School Power Lifting! I know looking for a job is hard work and can be very taxing so I am glad God has put this job in Diane's hands. She has earned it and I know she will make a great teacher. Way to go Diane, I am very happy for you!

Has anybody got this yet for their Wii? I have been slacking on my Shred DVD since I hit my 30 day mark and I am ready to try something new. I love my Wii Fit but it isn't really challenging me so it's time to pump up the action! I have just been going to the gym a lot and I want to get back into doing other stuff too so I thought this would be fun. Any thoughts?
