For my mother's day, me and B hung out around the house and worked on a variety of little projects - I started "motherly" tasks by running (literally) to the Cabezas' house to feed their dog, Bella, and take her for a walk.... which, might I add, she refused to do. Typical child, no? Bella got to the end of the street, sprawled out on the road, and would not move an inch until I said, "ok, let's go home."
Later, I sat and sipped coffee out on the porch while reading - Sounds exactly like something my momma would do! Throughout the day I also decided to put my limited culinary skills to use and whip us up some homemade chocolate chip cookies and for dinner, homemade fish tacos! In the mix of that I even managed to work on two papers I am working on with a grad school bud of mine, Josh, that we are trying to get ready for our 2012 academy of human resource development conference and for publication in some HR journals.
Throw a child in there and I believe I might of been able to handle being a mom on mother's day! Ha!
Since I have mentioned a few meals over the past couple of days, I thought I would share my recipes with you guys!
Momma Camp's Potato Salad
Ingredients:
For the average 5-6 person party...
4 baking potatoes
1 small jar of pimentos
Relish (I use dill but sweet works too)
3 large eggs
Mayonnaise
Mustard
Directions
Peel potatoes - Cut and boil in water till cooked through
Boil the eggs
Combine cooked potatoes, cooked eggs, mustard & mayonnaise to taste, 1 large spoonful of relish, pimentos, and salt and pepper. Depending on how you like your potato salad, the mustard/mayo/relish/salt/pepper will all be based on how you want it to taste :) But, it is still yummy in my book!
Black Bean and Corn Salsa
Ingredients
Fresh pico de gallo
1 can black beans
1 can corn
1 can rotel
Directions
Drain the black beans and corn, combine all ingredients
I like it best chilled!
Fish Tacos
There is nothing revolutionary here...
Ingredients
1 fillet of Tilapia
Lemon Pepper
2 corn tortillas
Spinach
Black bean and corn salsa
Directions
Add lemon pepper to the tilapia and either bake in the oven or cook in a pan on the stove top (if you are in a crunch or just want to make this a million times easier, use the frozen Gorton's fillets - they are yummy!). Warm the corn tortillas, cut cooked fish into strips (one fillet is plenty for two tacos), lay spinach leaves in the middle, top with fish and black bean corn salsa and serve. Sooooo yummy!
