hmmm i love food!

So, how many times do you think Bill Murray will appear on TV today? Any takers?
if you don't get my lame attempt at humor, it's understandable

Moving on...

Though I am not known for being a cook (at.all) I still like to go through recipes and find stuff that I myself, or my friends, might enjoy.  So, with that being said, here are several recipes I have found so far courtsey of Women's Health recipe finder online.

I hope you enjoy!


For those who enjoy the healthier potato chips...

Spiced Sweet Potato Chips


ingredients
1 sweet potato, peeled, 12 oz.
1/2 tsp ground cumin
1/4 tsp sugar
1/4 tsp chili powder
1/4 tsp salt

directions
preheat oven to 375
slice potato into very thin slices
spray 2 baking sheets with cooking spray
arrange the potato slices on the baking sheets in a single layer
coat the slices lightly with cooking spray
bake for 7 minutes, or until barely starting to brown
turn the potato slices over and return to oven
bake until lightly browned, about 7-10 minutes
transfer to a bowl and repeat with remaning potato slices if necessary

meanwhile, in a small bowl, combine the cumin, sugar, chili poweder, and salt
pour over the chips and toss well before serving

Maybe those of you who want a little bit of a harder recipe...

Veracruz Shrimp Tacos

ingredients
3/4 lb medium shrimp, peeled
12 scallions, trimmed, cut in 1" pieces
2 tsp canola oil
1 tsp dried oregano
3/4 cup grape tomatoes, halved
1/2 ripe avocado, sliced
1/4 cup chopped cilantro
2 tbsp ground flaxseed
juice of 1 lime
8 corn tortillas (6" diameter)
hot-pepper sauce

directions
toss shrimp, scallions, oil, and organo in bowl
let stand 15 minutes
combine tomatoes, avocado, cilantro, flaxseed, lime juice, and pinch of salt in another bowl
set aside
preheat perforated grill rack set over grill
brush grill rack with oil and wipe off excess
place shrimp and scallions on grill rack
cook 2 minutes, or until shrimp are browned on bottome
flip and cook 2 minutes longer, or until opaque
remove to plate
place tortillas directly on grill
cook about 1 minute on each side or until warm and starting to puff
place 2 tortillas on each of 4 plates
divide shrimp and scallions evenly on tortillas
top with salsa and sprinkle with hot pepper sauce

Energy Boost Trail Mix

ingredients
2 cups cheerios
1 cup dried pineapple, chopped
1 cup dried blueberries
1 cup dried apricots, sliced
1 bag (1 oz) freeze-dried strawberries
1/3 cup unsalted dry-roasted peanuts
1/4 cup semisweet chocolate chips
1/4 cup dry-roasted sunflower seeds

directions
super difficult this part
combine ingredients in a bowl
store in an airtight container for up to 1 week

I am a firm believer in letting a crock-pot cook for me...

Chunky Chicken Stew

ingredients
1 yellow or white onion, coarsely chopped
2 cloves garlic, minced
1 lb boneless, skinless chicken breasts, cut into large chunks
3 russet potatoes, peeled and cut into large cubes
1 lb carrots, cut into 1" pieces
3 cans (15 oz each) reduced-sodium vegetable broth
1/2 tsp salt
1/2 cup ketchup
1 box (10 oz) frozen peas, thawed *ew*
3/4 lb whole green beans
3 tbsp worcestershire sauce
1 tsp hot paprika
1/2 tsp freshly ground black pepper
1/2 tsp red-pepper flakes

directions
place onion, garlic and chicken in 4-quart or larger slow cooker
stir in potatoes, carrots, broth, salt, and ketchup
cover
cook on low 4-6 hours, or until potatoes and carrots are tender
add remaining ingredients
cover
cook 1 more hour

I am a huge fan of anything that says "quick" plus I adore spinach...

Quick Turkey-Spinach Lasagna

ingredients
1 1/4 cup fat-free ricotta cheese
1 egg
1/4 tsp ground black pepper
1 tbsp minced garlic
1 tbsp dried oregano
1 can (28 oz) crushed tomatoes
6 oven-ready lasagna noodles (half of 12 oz box)
3 cup (3 oz) finely chopped or torn baby spinach leaves
1 1/2 cup (8 oz) finely chopped skinless roast turkey
3/4 cup shredded provolone cheese

directions
preheat oven to 375
lightly coat a 12x8 inch baking dish with cooking spray
in a small bowl, beat ricotta, egg, and pepper with a fork until well blended
gently stir in garlic and oregano
spread 1/4 cup tomatoes over bottom of baking dish and place 3 noodles, overlapping slightly, over sauce
spread on half the ricotta mixture, half the spinach, half the turkey, half the remaining tomatoes and half the provolone
top with remaining noodles, ricotta mixture, spinach, turkey, tomatoes and provolone
coat one side of 14" long piece of aluminum foil with cooking spray
lay the foil, sprayed side down, over lasagna and loosely seal the edges
bake for about 45 minutes or until bubbling
let sit for 5 minutes

Fish is always such a great thing to serve for lunch or dinner and Fish Taco's are a huge favorite of mine...

Spicy Fish Tacos with Slaw
ingredients
1 lb halibut or mahi-mahi
juice of 2 limes
1/3 cup nonfat plain yogurt
3 cups shredded red cabbage
8, 6" soft corn tortillas
2 tbsp groub cumin
2 tsp chili powder
1 tsp garlic powder

directions
cut fish into bite-sized chunks
in a medium bowl, whisk together lime juice, cumin, chili powder, and garlic powder
add fish and marinate for at least 10 minutes
meanwhile, in another medium bowl, mix together yogurt and salt to taste
toss with cabbage
coat a large skillet with cooking spray and heat on medium high
ass fish and cook for 3-4 minutes, turning frequently
as fish cooks, wrap tortllas in damp paper towels and microwave for 30 seconds
divide fish evenly among tortillas
top with cabbage mixture
serve with lime wedges if desired

And tell me, what is life without a little bit of dessert?...

Dark Chocolate Crackle Cookies

ingredients
1/4 Cup + 2 Tbsp omega-3-enriched tub margarine
(such as Smart Balance)
1/4 cup + 2 Tbsp unsweetened cocoa
2 tsp almond extract
3/4 cup brown sugar
1/4 cup + 2 Tbsp unsweetened applesauce
2 Tbsp honey
1 1/4 cups white whole wheat flour
4 tsp granulated sugar

directions
Place margarine in microwaveable mixing bowl
cook 1 minute on high power, or until meltes
add cocoa and almond extract
stir until smooth
add brown sugar, applesauce, and honey
stir until smooth
add flour and pinch of salt
stir until no white is visible
cover bowl with plastic wrap and refrigerate for several hours or overnight, until dough is stiff
when dough is ready,
preheat oven to 350
coat several baking sheets with cooking spray
place granulated sugar in small dish
scoop out scant tablespoonful of the dough
roll between palms into ball, flattening slightly
dip one side into sugar and place, sugar side up, on baking sheet
continue until all cookies are shaped
bake 7-8 minutes, or until surface is set but still soft to the touch
do not overbake
allow cookies to cool on pan
store in tightly covered tin

Wow, these are great recipes! I love sweet potatoes. My husband and I have been out of town the past few weekends and I told him this weekend I am staying home (not leaving AT ALL) and cooking all weekend! I am going to have to try the SP chips and choc cookies....yum!

These recipes are like a goldmine. If I could get my tush in the kitchen, we would be eating like kings for two solid weeks!

I'm definitely going to have to try those spicey tacos, the chicken stew, and the crackle cookies.
