Holiday Cookies - YUMM!

Chocolate Peppermint Cookies


Makes: 2 ½ dozen
Prep time: 10 minutes
Microwave: 2 minutes
Bake: 325, 18 minutes
Calories: 135 per cookie


Ingredients:
4oz semisweet chocolate, broken up
½ Cup (1 stick) unsalted butter, softened
1 Cup sugar
2 eggs
1 ¾ Cups all-purpose flour
¼ tsp salt
2 Tbl unsweetened cocoa powder
1 tsp mint extract
4oz white chocolate, broken up
½ tsp vegetable oil
1/3 cup crushed candy canes



Directions:
Heat oven to 325.
Butter 2 large baking sheets.
Place chocolate in microwaveable bowl.
Cook 1 minute. Stir till smooth. Let cool for 5 minutes.
Beat butter and sugar in a large bowl till blended.
Beat in cooled chocolate.
Add eggs and beat till smooth.
Stir in flour, salt and cocoa powder until a soft dough forms.
Beat in mint extract.
Drop dough by tablespoons onto baking sheets.
Bake @ 325 for 18 minutes or until dry on top.
Add to wire rack.
While cookies cool, combine white chocolate and oil in glass bowl.
Microwave 30 seconds, stir, microwave another 30 seconds.
Stir until smooth.
Spoon about 1 tsp white chocolate onto each cookie then top each with ½ tsp of the crushed candy.
Let stand to harden for 30 minutes.

No wonder I gain so much weight during the holidays..ahh, these look delish!
I think my mother-in-law is trying to keep me fat. Ha! Every time I start losing weight she bakes for me..what's up with that?

Those look amazing! I love chocolate and peppermint together. I always look forward to having peppermint mochas this time of year!
