A weekend of fun!

This past weekend was very busy and a lot of fun! Starting at the beginning, Friday morning I woke up at 5:45am to go work out. I wanted to work out in the morning to get ready for my morning run I had coming up on Sunday. I must say, 5:45am is very early. After work on Friday Bret and I ran an errand to Target and then I went home and started making cupcakes for Jennifer's shower Saturday morning. I am by no means a "cook" per say but I was very proud of the way my cupcakes turned out. It was a recipe I got from Lauren Allison and they are to die for. The cupcakes themselves have mandarin oranges mixed in while the icing is cooled with pineapples - very yummy! So good in fact I didn't even have any baby shower cake! I recommend everyone making them!

Mandarin Orange Cupcakes with Pineapple Icing
Ingredients for Cake
1 box of butter cake mix
1 large can mandarin oranges, undrained
4 eggs
1/2 cup Oil
Ingredients for Icing
1 can crushed pineapples
1 large box Vanilla Instant Pudding
1 large container of Cool Whip
Directions
Mix cake ingredients together
Pour into Cupcake Pan
Bake according to box (Approx. 15 - 20 Mins)
For Icing,
Mix pineapple and box of Vanilla Instant Pudding together
Refrigerate
Once Cupcakes have cooled, mix Pineapple/Pudding mixture with Cool Whip
Ice the Cupcakes
Refrigerate and then serve once chilled.
After I was done working on my cupcakes, Jennifer and Robert came over for a few minutes to borrow Bret's golf clubs. Robert was going to be playing Golf while Jennifer enjoyed her baby shower so he needed some clubs. So we got to visit with them for a little bit so that was enjoyable. Afterwards Bret and I headed to dinner at Chili's! We haven't been in Chili's in forever so it was nice and very yummy! Keeping with my Lent obligations I couldn't eat meat so I went with Shrimp Alfredo! Very good, very good. After that Bret and I headed off to Best Buy. While there Bret decided he was ready to buy a new TV. That was super exciting! He had been doing research and finally found one that he liked. So the rest of Friday night was spent putting together our new TV and getting use to how much bigger it was than our previous one - which now looks excellent in our bedroom!

Saturday morning was shower time (for Jennifer and Maddie that is). It was, without a doubt, the most windy day ever in the history of College Station. Trying to carry gifts and cupcakes to the car in the middle of a twister while trying to keep my dress down was an impossible task. Needless to say, I think my whole apartment complex got a free peep show. Always fun. I got over to Ivonne's house early to set up everything with the other hostesses and then it was time to get started! Jennifer had a good turnout for her shower and she got a lot of cute things for Maddie. I cannot wait to see her in all the adorable outfits! We all had a good time and then it was off to the house again where I quickly discovered Bret went shopping while I was away. Waiting for me when I got home was two new boxes, one for the living room and one for the bedroom, that allowed us now to get HD picture + DVR. Also, the living room now had a brand new Blue Ray Disc player. Bret was like a kid in a candy store with all his new gadgets! We are still getting use to everything, especially the whole DVR thing. This morning I set the one in the bedroom to record Regis & Kelly, whom I love, so I am excited to get home and see if I did that properly!!

Sunday morning was race day! Bright and early, again, 5:45am, Bret and I got up and headed out to Veterans Park. Jennifer and Robert came out as well to support me which was very exciting! It was SO COLD! I think it was roughly 30 degrees with a wind chill in the 2o's. Fun right?! At about 7:10am or so I got started on my Armadillo Dash 5k! I enjoyed my run and was done close to 35 minutes later - I did help a little boy at one point who was on the side throwing up. He didn't know where his parents were and I felt bad for him so I checked to make sure he was ok then I was back on my way. (during that time I was running in place, I did not stop) I was very proud of myself. My two goals were 1) Run the entire time and 2) Finish the race... I did both! Afterwards me, Bret, Jennifer and Robert all went to IHop for some well deserved warm, yummy and fattening food! I was sad I couldn't eat their hash browns because I LOVE them, but oh well, I am sticking to my Lent commitment! The rest of the day I stayed on the couch sleeping and then I headed to the bedroom about 8:45ish. I was exhausted!

congrats on finishing the race so well!! It's very motivating! Here pretty soon I believe I'll be running again :)
